Honey Mustard Pretzel-Coated Chicken Fingers

So you know those to.die.for brownies I shared with everyone yesterday? Well I told you I'd give you a recipe today that would use up those leftover crushed Glutino pretzels. Here it is. It's our favorite chicken finger recipe, to date. The craziest part is that this dinner happened by accident. My complete hatred over wasting stuff, coupled with the "I have no idea what to make for dinner" routine, became my inspiration for said chicken fingers. These were so good, so easy and extremely satisfying. These would be a great meal for kids, too. Enjoy!


Ingredients
1 pound chicken breasts, cut into 8 strips
2 cups GF pretzels, crushed (I used Glutino)
2 eggs
1/4 cup honey mustard and extra for dipping

Preparation Instructions
Preheat oven to 375 degrees. Spray a baking sheet with non-stick spray.

Combine the egg and honey mustard in a shallow bowl. Place crushed pretzels in another bowl. One by one, coat each chicken strip with the egg mixture and then the crushed pretzels. Tranfer to a baking sheet. Mist the strips with the non-stick spray. Bake in the over for 20 minutes total, flipping them half way through, until the chicken is cooked through. Serve with honey mustard as dipping sauce.
