Arugula and Grapefruit Salad

This is one of those salads that is so easy and so delicious and every.single.time I make it, I say to myself, ‘why have I not put this on my blog, yet?’ So here we are. My favorite salad. The combination of flavors is completely unexpected and yet perfect for one another. I typically make it for myself for lunch, so my recipe below is for one. I also only make it when I know my grapefruit is perfect. And lucky me, I currently have a box full of perfect grapefruits in my house thanks to my fabulous parents sending us a present from Florida. Yay! An unrelated side note - now that I've actually had to type this recipe out, I've discovered another word that has gone on my list of "least favorite words". Pith? Ew. Bad, bad word. Excuse my tangent…enjoy this recipe!

1 cup of arugula
1 ruby red grapefruit
1/2 avocado
1/4 cup pitted olives
1 lime, juiced
1 TBSP olive oil
goat cheese
kosher salt and freshly ground black pepper

Preparation Instructions
Cut both ends off the grapefruit and stand it on a cutting board. With a paring knife, trim off the peel and white pith, trying not to remove any of the grapefruit. Working over a bowl, cut the segments free of the membrane, letting each segment drop into the bowl. After you've cut all the segments, squeeze all the juice out of the membranes into the bowl. 

Cut the avocado in half, (if making for one) use the half without the pit and remove the peel. Slice each lengthwise into 6 thin slices. Drain the grapefruit and reserve the juice. Add the avocado to the grapefruit along with the olives, lime juice, olive oil, salt and pepper. Toss gently to mix. Assemble one cup of arugula on the plate. Top with the grapefruit salad. Top each serving with some goat cheese. Serve.

  1. I have wanted to make this for years, I just never have for some reason. Your ingredient list looks better than some that I have seen in the past though, so I might have to try it your way!
