I'm always getting asked for quick-and-easy GF desserts that can be brought to book clubs, pot-lucks or other gatherings where a GF eater will be in attendance. This is one of my favorites and I haven't made them in a while. Back in my college days (go Hoosiers!), there were these AHmazing cookies at our Student Union that a friend introduced me to and I quickly became addicted. They aren't the healthiest, but my opinion? Life is entirely too short not to enjoy something sweet and delicious every once in a while. And anything that is no-bake is easily top 5 in my book. Well, here is my remake and I say you give them a try.
Ingredients
1 1/2 cups sugar
1 stick butter
1/3 cup cocoa powder
1/2 cup milk
1/2 cup chunky peanut butter
1 tsp vanilla extract
2 1/2 cups GF oats (I use Bob’s Red Mill Gluten Free Whole Grain Rolled Oats)
Preparation Instructions
Mix the sugar, butter, cocoa, and milk in a medium saucepan and let boil for 1 minute (but don’t start timing until it comes to a full boil).
Add the peanut butter and vanilla. Mix quickly until peanut butter melts. Then add the oatmeal and mix until well blended.
Drop spoonfuls on parchment paper. Allow to set and cool completely.
This should make 20 3-inch cookies.
